vegan brownies

Ingredients
  

  • 1/2 cup avocado oil
  • 3/8 cup Vegan Egg
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 1/2 cups sugar
  • 3/4 cups boiling water
  • 1 tsp salt
  • 1/2 cup powdered sugar
  • 1 1/2 cups all-purpose flour
  • 2/3 cups dutch-processed cocoa
  • 1 cup chocolate chips (optional)
  • 1/4 tsp baking powder (optional, makes for a more cakey brownie)

Instructions
 

  • Preheat Oven to 325F (300F Convection)
  • Mix sugar and boiling water together until sugar melts and set aside (don't skip this step, as it leads to the shiny crinkly brownie top)
  • In a large bowl, mix avocado oil, vegan egg, cinnamon, vanilla extract, and salt
  • Temper mixture with the warm sugar water and then mix in the sugar water
  • Sift flour, cocoa powder, powdered sugar, and baking powder (if using) directly into the liquid mixture
  • Mix just enough to bring together (do not overmix)
  • Add chocolate chips and give a quick stir
  • In a parchment lined 8x8 that is sprayed with oil, pour in the batter
  • Bake 40-45 mins until a toothpick comes out clean

Notes

If recipe is doubled, then use a 9x13
